One half of this dynamic duo, Chef Loi Ming Ai's humble beginnings came from a small local pastry shop, but has moved on to be one of the best pastry chefs in the world, having won the Coupe Du Monde De La Patisserie in 2019 (World Pastry Cup 2019). His talents specialize in sculpturing, a result of his keen interest in clay sculptures and tutorial sculpture videos, and the craft of frozen desserts.
Since then, Chef Loi has expanded his experience to all around the world. He often passes his learnings and wisdoms to younger aspiring pastry chefs while conducting masterclasses and consultation locally and internationally. His favourite thing about pastry making is the different interpretations of desserts that come from each country's cultures, flavours and food habits, and that no matter where you're from, you'll always have time for a sweet treat.
